Recipe - Balsamic Steak & Veggie Rolls

I made these last night, using flank steak. It's one of those tried and true recipes I could make in my sleep. Definitely delicious! These steak and veggie rolls are meant to be an appetizer, we eat them as a main dish. For my large family, I made four times this recipe amount. Served with butter garlic bread and fruit cocktail for desert!




Balsamic Glazed Steak & Veggie Rolls.


Prep time - 15 mins
Cook time - 30 mins
Total time- 45 mins

Recipe type: Appetizer (Unless you're me, then it's a main dish!)
Serves: 8


Ingredients -
Steak and Veggies -

*8 thin slices sirloin or flank steak (length and width according to personal preference)
*1 tbsp. Extra virgin olive oil
*Pinch of salt and freshly ground black pepper
*Fresh rosemary, chopped
*1 red bell pepper, sliced into thin strips
*1 green bell pepper, sliced into thin strips
*1 medium zucchini, sliced into thin strips
*1 medium yellow onion, halved and then thinly sliced
*½ cup white button mushrooms, cut into thin strips

- Balsamic Glaze -
*About 3 tbsp extra virgin olive oil
*1 large clove garlic, minced
*¼ cup dark balsamic vinegar
*2 tablespoons dry red wine
*2 teaspoons brown sugar
*2 sprigs fresh rosemary
*¼ cup Progresso™ beef flavored broth

- Instructions -
*Rub each side of the steak slices with a little extra virgin olive oil.

*Sprinkle with salt, freshly ground black pepper and some chopped fresh rosemary.

*Heat a skillet over medium-high with 1 tbsp. of olive oil.

*Add the sliced vegetables in and cook until tender, season with a dash of salt and pepper.

*Place a few of the vegetable strips on one end of each (uncooked) steak slice.

*Roll them up, and secure with a toothpick.

*Repeat for each steak roll.

- For the rosemary balsamic glaze:
Heat 1 tbsp olive oil in a small saucepan over medium-high heat.
Add the garlic and cook for 1 minute.
Add the balsamic vinegar, red wine, brown sugar and rosemary sprigs and bring to a rapid boil.
Reduce the heat and simmer uncovered for 5 minutes.
Next add the broth and then return to a boil.

Once it reaches a boil, reduce the heat to low and simmer for another 15 minutes.

Discard the rosemary sprigs.
Next, prepare your grill and grill steak & veggie roll ups on each side for about 2 minutes or until done. (Do the same if cooking them in a skillet, frying over medium-high heat until done).


Serve immediately drizzled with the balsamic glaze.
